The Best Almond Crusted Chicken Stir Fry

Have you ever thought of using almonds to make a crust for chicken? I can’t believe how delicious these almond crusted chicken came out! It’s almost like your biting into a crunch of almonds and then the softness of the tenderized chicken almost melts in your mouth. This almond crusted chicken recipe is so versatile! You can literally toss it in salad, or even make a dipping sauce to go with. I decided to make stir fry and the combination and texture of it all, came out so good!

I usually like to come up with different ways of cooking chicken especially when you want to make crusted chicken. I don’t know about you but I do not like to dip chicken in an egg wash mixture. So I figured out another way of doing that without the egg wash mixture and still keep the almonds sticking onto the chicken. I found the perfect recipe to do just the trick!

Use your favorite oil spray! Yes, this is the trick to holding the crushed almonds on the chicken without the almonds falling off! By all means you can still make an egg wash mixture if you prefer. Once you have coated your chicken with oil, you will dip the chicken in almond flour, then spray again with oil, and dip onto the crushed almonds. Scroll down below for a step by step directions.

What you’ll need:

Almonds - I used plain whole almonds. You can also use silvered or sliced almonds. Just keep in mind, you want the almonds crushed.

Almond flour - you can also use regular flour. However, using almond flour will give the chicken a delicious flavor that pairs so well with the crushed almonds. Also, this will keep the crushed almonds from holding its place once you sprayed the chicken with oil.

Cooking oil spray- I used avocado spray. You can use any oil based spray. You will spray the oil on the chicken on both side. This will create a sticky base for the almonds to stick to the chicken.

Chicken tenders- I recommended using this kind of chicken as it’s super easy and fast to cook, and makes the perfect size for this recipe. You can use chicken breast too. Just make sure to split chicken breast and cut length wise.

Stir Fry Sauce

I made a sweet honey sauce that pulls all the flavors together! Ingredients you’ll need are:

  • Garlic
  • Honey
  • Brown Sugar
  • Soy Sauce
  • Corn starch
  • Salt

In a small pot over medium to high heat, sauté garlic in olive oil until garlic is golden.

In a small pot mix cornstarch and water together, and pour over the garlic.

Add brown sugar, soy sauce, honey, and salt. Mix until sauce thickens and set aside. You can make the sauce in advance and can be kept in the fridge for a week.

For this stir fry recipe I made white rice and I cooked some broccoli,zucchini, green beans, and peas on the side! I bought the vegetable blend from Traders Joe’s and it was so good! You can also use brown rice and any vegetables you desire!

Ingredients

  • 6 Pieces Chicken tenders

  • 3 Cups Whole almonds

  • 2 Cups Almond Flour

  • Cooking spray oil

  • Salt

  • Pepper

  • Sweet Honey Stir Fry Sauce
  • 3 tbsp Honey

  • 1 tbsp Cornstarch

  • 1 tsp Salt

  • 2 Garlic cloves

  • 1/2 cup Water

  • 1 tbsp Olive Oil

Directions

  • For the chicken, wash properly and pat dry any excess water.
  • Using a blender, add the almonds, and pulse until almonds are crushed. Pour in a bowl and set aside.
  • Preheat oven at 400° F
  • Season each side of the chicken with salt and pepper.
  • In a bowl add the almond flour.
  • Using spray oil, coat chicken on both side.
  • Dip the chicken in the almond flour, then, spray oil on both sides of the chicken.
  • Dip the chicken in the crushed almonds, pressing firmly on the chicken.
  • Lay the chicken on a sprayed baking dish.
  • Repeat the process for all the chicken.
  • Bake for 30-35 minutes or until chicken is tender and almonds are golden.
  • Sweet Honey Stir Fry Sauce
  • In a small pot over medium to high heat, saute chopped garlic in olive oil.
  • In a small pot mix cornstarch and water together, and pour over the garlic.
  • Add brown sugar, soy sauce, honey, and salt. Mix until sauce thickens and set aside.

Notes

  • You can use silvered or sliced almonds for this recipe. Just make sure to crush the almonds using a blender on pulse to achieve the right texture.
  • You may need to spray a bit more spray oil once you dipped the chicken in crushed almonds to hold the almonds in place. Spray more and press more almonds on the chicken firmly.
